The difference between fast-dissolving and slow-dissolving hydroxypropyl methylcellulose (HPMC)is the exact opposite of what we might expect. This is because the cold-water fast-dissolving type of HPMC undergoes glyoxal surface treatment. The hot-dissolving type does not undergo glyoxal surface treatment.
